This is a seafood stuffing that has been in my family for a while. We have never actually stuffed the bird with this to avoid the turkey having a 'fishy' taste. We tend to like our dressing very moist, but if you prefer a drier stuffing, only use half of the broth.
Feed a crowd with a Cajun-style crawfish boil prepared outside over propane heat or inside atop the stove. Use your largest stockpot and boil artichokes, potatoes, corn, onions, mushrooms, green beans, and sausage with crawfish in a spicy broth brimming with traditional seasonings.
Italian-style tomatoes go for a brief simmer with tender white cannellini beans and garden-fresh spinach. Serve over hot penne and spoon crumbled bits of feta cheese over the top for a creamy sharp bite with every mouthful.
